Is there a possibility to request ICCs in my cross classified (random effects) model in Mplus?

No but I would recommend estimating the univariate model for each variable and compute it from there

MODEL:
%WITHIN%
y (v1);
%BETWEEN C1%
y (v2);
%BETWEEN C2%
y (v3);

model constraint:
new(icc2); icc2=v2/(v1+v2+v3);
new(icc3); icc3=v3/(v1+v2+v3);
