I think you refer to an ordered categorical (ordinal) latent class variable. There is a chapter on that by Croon in the Hagenaars and McCutcheon book Applied Latent Class Analysis. I haven't worked with this model so have no setups. Perhaps Model Constraint can be used to accomplish this. You may want to ask on SEMNET if someone else has used Mplus for this.
