I have a feeling that I am missing something really obvious, but after two days, I'm not sure what it is.

I have two waves of math achievement data (pre-k and K) and I want to identify patterns of scores. There is only one measure of math achievement at each wave.

If I had 3 waves of data, I know that I would use GMM. If the math achievement data were categorical (instead of continuous) I would use LCA.

What is the best categorical latent variable measure for the data that I have?

Thanks much in advance.

You can use LCA also for continuous outcomes the same way as for categorical.
