I ran an ordinal logistic regression (0-1-2) with MLR and the model results give me 2 thresholds. However, I am not sure how to interpret the results. What do the thresholds and beta's exactly represent? Proportional odds, cumulative probabilities, or something else? Hope you can help me.

Mplus estimates a proportional odds model for ordinal categorical variables. The thresholds and regression coefficients are in the logit scale. See Section 6.2.1 on page 180 of An Introduction to Categorical Data Analysis (Second Edition) by Alan Agresti for further information. Note that the alpha parameter there has the opposite sign of the threshold given in Mplus.
