I'm running a parallel process model, regressing intercepts/slopes on 3 covariates. I want to also include interaction terms of these three variables by age and gender. Should they be specified to enter simultaneously or run in separate models? Also, does the output provide clues as to whether the interaction term predicted the intercept/slopes over and above the main effect of each corresponding variable?

I would enter them all at the same time. Significance of main effects and interactions is given.
