Is there an example anywhere to your knowledge of how to conduct a LGM montecarlo study with ordered categorical data?

You should be able to adapt the Monte Carlo counterpart of Example 8.10. Most examples in the Mplus User's Guide have a Monte Carlo counterpart. These are on the CD that comes with Mplus and are downloaded as part of the installation.

What factors affect parameter bias? I ran a montecarlo with three associated processes, and although my power and coverage is fine, parameter bias is about 25% for two valuable parameters. My standard error bias is good. Is there something I can do to improve bias?

It seems unlikely that you would have parameter bias and not standard error bias. I suspect there is something wrong with your setup. For example, your population values used for coverage may be incorrect.
