I've been running simple CFAs with no problems but for some reason I'm now getting the 2-tailed p-value only for the unstandardized model results, and simply getting an estimate (no accompanying p-value) for the StdYX and Std estimates, even though I haven't changed anything in the Output line.

output:
Standardized;
Modindices;

Is there some way to request in the output line the two-tailed p-value for the standardized model results in addition to the "regular" (unstandardized) model results?

It sounds like you are using WLSMV and have a conditional model. In this situation, standard errors for standardized and therefore p-values are not given.
